Chicken stroganoff, quick and easy food recipe

This is a quick and easy food recipe, which can be cooked in under 30 minutes, and will serve 2 people a delicious plate of chicken stroganoff with leeks. It's a similar dish to the Russian stroganoff, with a slight twist. The ingredients you will need, are listed as follows.

  • One knob of butter
  • Freshly ground black pepper, and salt
  • One small glass of white wine
  • 150g of long grain rice
  • Fresh parsley
  • A large handful of mushrooms
  • 2 chicken breasts
  • Olive oil
  • 280 ml of single cream
  • 1 large leek
  • 1 lemon

Preparation

In preparation for starting your meal, boil a large pan of water, add some salt, bring to the boil, add your rice, then reduce the heat. Cook for the stated time on the packaging, as all brands vary. Chop the leek length ways, and across, nice and thin, and remember to rinse under a tap. Cut the chicken breasts into slices, and chop the mushrooms.


Let's get cooking

Place a large frying pan on a high heat setting, and add some olive oil along with the butter. Sprinkle a little salt and pepper, and add the glass of wine, along with a glass of water. Simmer for 5 minutes, making sure there are bubbles, and cover with either foil, or a lid, leaving a gap. Finely chop the parsley, including the stalks, and add to the frying pan along with the chicken, cream, and mushrooms. Bring all the ingredients back to the boil, whilst stirring, reduce the heat, and simmer for 10 minutes. By now your rice should be ready, drain and put to one side. when your cooking time is nearly up, squeeze the juice from one half of the lemon into the chicken stroganoff. Plate up the chicken stroganoff, and spoon the rice over both dishes. Scatter a little parsley, and serve the dish with the other half of the lemon, cut into 2 wedges.
